Abstract (English):
The new scientific data about the protein-carbohydrate granule obtainingfor fish are given in the article. As a result of the theoretical analysis and the set of factors that influence on the granulate preparing process for fish the authors substantiated the assessment model for the obtaining process of granules of any composition and properties.
