THE ASSESSMENT OF QUALITY AND SAFETY OF NOT CRYSTALLIZED HONEY OF THE SOUTHERN AREAS OF OMSK REGION

Abstract (English):
Beekeeping in Russia has been widely spread and is one of the most ancient occupations of the people. Beekeeping gives a number of valuable products for food of the people and is also used in medical purposes and as raw materials for a num-ber of industries. The task of veterinary experts in the markets and in laboratories of veterinary sani-tary examination of food is the correct organization of obligatory veterinary health control which pro-vides an exit of quality products and guarantees protection of consumers against substandard prod-ucts. Versatile and more detailed studies of honey contribute not only to expansion of the range and improvement of the quality, but also provide the population with natural environmentally friendly product allowing correcting the state of health Rus-sian citizens. Flower honey which turns out as a result of collecting and processing of flowers nectar by bees that is considered the most valuable. The work purpose was to carry out expertise of several samples of honey and to draw the expert opinion on the basis of the conducted laboratory research-es. The tasks were to study the ways of laboratory researches of honey; to conduct researches of two samples of honey made in the southern areas of Omsk region; to give the comparative characteristic and veterinary and sanitary assessment of these samples. Two samples of the honey bought on the market of Omsk collected from the southern areas of the region have served as the material. At re-searches made by organoleptic, physical and chemical methods it has been found out that in the test “Acacia” the compliance of all indicators of the requirement of the State Standard 54644-2011 “Natural honey” was observed. And the sample “the Estimated counterfeit” did not meet these require-ments.
