AMINO ADD SEQUENCE DETERMINATION IN THE MILK PROTEIN HYDROLYSATE RELEASING FRAGMENTS
Abstract and keywords
Abstract (English):
The detailed analysis of the milk protein hydrolysate peptide profiles that are received with the use of different proteolytic enzymes is conducted; the amino acid sequence of the received fragments is determined; the peptides, which have biological activity, are found in the casein hydrolysate composition.

Keywords:
casein hydrolysate, biological activity, angiotensin converting enzyme, sequence, thermolysin, hydrolysis, enzyme, biologically active peptide, functional food
